![]() Chitinolytic enzymes have wide range of applications such as, preparation of single cell protein, preparation of pharmaceutically important chito-oligosaccharides and N-acetyl D-glucosamine. Chitin is closely associated with minerals, lipids and pigments. More than 80.000 (Wekipedia, 2013) metric tons of chitin is obtained per year from the marine waste. ![]() About 130 million tons of fish wastes is generated each year in the (Wekipedia, 2013). Fish scales set variety of nutrition, health care, substance-in one. A Crustacean and fish scales waste are ideal as row material for chitin production. Fish scales are one of the most common sources of chitin. Chitin is an insoluble natural polymer, commonly present among crustacean. ![]() Chitinases have been isolated from different microorganisms, such as fungi and bacteria. In the end, the treatment of ice cream with 15% dates found the best ingredients.Ĭhitinases are a group of enzymes capable of degrading chitin directly into low molecular weight-products. Concerning treatments with 20% and 25% Dates, they showed significant differences with treatment with 15% Dates (p<0.001) in the Ice Cream overrun. Resultants ice cream was examined for chemical composition and organoleptic properties as follows: Ice cream treatment with 15% Dates was adjudged as the best treatment in appearance (18.13☑.40), while, significant differences were recorded between treatment by 15% Dates with treatments by 5% Dates, 10% Dates and control treatment (p<0.05, p<0.001 and p<0.05, respectively) in odor of ice cream. Six treatments of ice cream were made by adding 0, 5, 10, 15, 20 and 25% date fruit "Hayani" to the ingredients. The objective of this research was to determine the effect of increasing Date fruits added to the ingredients on chemical composition, organoleptic properties and yield of ice cream. The main idea in this search are the production of ice cream with "Hayani" dates. "Hayani" dates gives high output and exposed to rapid deterioration during the marketing of dates, where doesn't stay more than 3-4 days at room temperature and become unfit for consumption, this leads to significant loss of production and not to take advantage of it so was the idea to drying the dates and stored to use throughout the year. But we also found out that the kangkong jam is preferred more than the guso jam did.ĭamietta Governorate is famous for its production of dates especially "Hayani" dates, are producing large amounts of it in short time. So, it is undecided if it is acceptable or not among the second year students of Pilgrim Christian College (school year 2010 -2011). The total mean score of the kangkong jam (sample 2) was interpreted to be neither agree nor disagree. The kangkong jam had low scores so we made a sample 2 of kangkng jam (improved) and did the same thing as we did with sample 1. We then graph the results and then compared the mean scores. And in this way, we can determine If the jams are acceptable or unacceptable to be eaten. We computed the scores to get their mean and interpreted it if it who rated strongly disagree, disagree, neither disagree nor agree, agree, or strongly agree. The results were tallied using the two-way ANOVA and the results of the kangkong jam were compared to the guso. We conducted a survey with 15 respondents to taste and rate our of kangkong and guso jam. ![]() The research aims to find out if delicious, healthy jam, aside from fruit, can also be made from vegetable kangkong. Since seaweed is already proven to be an alternative to desserts, which are commonly jams, like guso jam, we will be making a kangkong jam for it has similar features as guso. The vegetable that we focused was the vegetable kangkong. ![]()
